For our gluten-free oat bread we only use gluten-free oat flakes. Our gluten-free oat flakes are free from contamination with gluten-containing cereals in cultivation, transport and processing. We analyze each batch and guarantee < 20 ppm gluten. Most people with gluten intolerance can include gluten-free oats in their diet because the protein structure of oats is different from that of wheat, rye, spelt and barley.
