For the Atlantic herring, the north of FAO fishing area 27 is an ideal habitat. The fishing practised there with purse seine nets and pelagic trawls is recognised as sustainable by the Marine Stewardship Council (MSC). The herrings we use originate from the North-East Atlantic. The herring are swarm fish. These are located with an echo sounder and caught with nets. The mesh size of nets is mandatory and they must be large enough to allow juveniles to hatch through them. We support the conservation fishery initiative on herring, i.e. only as many herring are caught as juveniles grow back. We only use Atlantic fish. We guarantee not to use fish from the North Sea, Baltic Sea or the Mediterranean Sea, as the water in these parts of the sea can hardly be exchanged and the water quality is correspondingly poor. The Atlantic Ocean is also much deeper than the Baltic Sea, North Sea and Mediterranean Sea. The Atlantic is mixed with deep water by enormous ocean currents (the Gulf Stream is known), i.e. it has a much better water quality to the above-mentioned seas. The heavy metal analyses of our fish products usually show values below the detection limit.
